When not on the motorcycle Cathy was spending it with her family, friends, and dogs out in nature camping, fishing, or tending to her flowers. Near and dear to Cathy was her grandbabies, nieces and nephews and would often remind them that her love for them was “as high as the sky as deep as the ocean and as wide as the world, forever and ever”.
Her family includes her stepdaughters: Candy Knapp (Mikey Jones) and Lisa Mendez (Jesus); grandchildren: Austin, Edward, Preston, Cale, Emilie, and Trinity; Special Aunt to: Thomas, Amanda, Cameron, Matthew, and AJ; Cathy’s father, Eugene Schropp; siblings: Jackie Schropp, Charles Schropp and Brenda Martinez.
